Warm, buttery avocado is complimented with a bit of cilantro and kicked up a notch with the sweet tartness of sun-dried tomatoes.
All of those ingredients are mixed together and wrapped in an egg roll wrapper, then fried until crispy and golden. They’re done pretty fast because the only thing you’re doing is making sure you crisp up the egg roll wrapper.
My first taste of this avocado appetizer was when I was awkward pre-teen Sam(about 17 years ago, yikes!). My aunt recommended the fried treat to my parents. Avocado was a new ingredient to little pre-teen me so I wasn’t necessarily excited about the suggestion. But I wasn’t opposed. I guess you could say I was neutral.
The next family visit to The Cheesecake Factory my parents ordered the Avocado Egg Rolls.
They arrived at the table.
I’d like to say I remember my first bite. But I don’t.
All I remember is absolutely loving avocado egg rolls after that visit to our Cheesecake Factory. Then, gushing to my aunt about how yummy they are.
Since the first order of avocado egg rolls, my family requests it every. single. time. we have dinner at our Cheesecake Factory.
So, you can understand why this recipe is special to me.
What is a dish you always order when you visit your favorite restaurant?
- 4 avocados skinned, de-seeded, chopped into chunks
- 1/3 cup sun-dried tomatoes in oil drained and chopped fine
- 3 tbsp red onion chopped fine
- 3 tbsp fresh cilantro chopped fine
- egg roll wrappers
- 3 cups olive oil
In a large bowl gently mix the avocado, sun-dried tomato, red onion, and cilantro until just combined.
Lay out an egg roll wrapper. Scoop a heaping tablespoon of the avocado mixture onto the center of the wrapper, fold, set aside, and repeat until all the avocado mixture is used.

Heat the olive oil in a deep cast iron skillet until shimmering. Gently place each of your prepared egg rolls into the oil. Fry for about 30 seconds, flip, and repeat with the rest of the egg rolls. Place the egg rolls on a paper towel. Serve and enjoy.
