Potatoes are the most versatile food we know. Everyone loves potatoes in one form or another.

Crispy french fries, smooth mashed potatoes and gravy, and baked potatoes are some classic forms of this popular starch.

Potatoes can transform into so many textures, colors, and tastes. They are like the shapeshifters of the starch world.

But, sometimes they take too long to soften! Does anyone else feel my pain?

Since waiting on a full baked potato after work isn’t in my schedule, I make cheesy baked potato slices instead.

This easy potato recipe is a great side dish to all proteins. You can also eat just the potatoes with a few choice topping for a meatless meal as well.

I mean, they’re done in 20 minutes! How can you NOT?

So, you will slice a classic russet potato into ½ inch slices. Using a mandolin to slice the potatoes is a groovy trick but if you don’t have one then a sharp knife does the job.

Then you place the slices on a baking sheet, brush with extra virgin olive oil and lightly sprinkle with salt, pepper, and garlic powder.

While in the oven the potato slices crisp up a teeny bit. The crispiness is a nice contrast to the gooey cheese that will be melted on.

After about 15 minutes check the slices. If you can stab through easily with a fork, sprinkle the cheese evenly on top of the slices and pop those babies back in the oven until the cheese is melted!

Top your easy side dish with:

  • Crumbled bacon
    Sour cream
    Chopped green onions
    Chili
    Black olives
    Salsa
    Ranch dressing

Ingredients

  • 4 russet potatoes sliced 1/2 inch thick
  • 1/4 cup extra virgin olive oil (or butter)
  • 1 Tbsp garlic powder
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat your oven to 400 degrees.

  2. Arrange the potato slice on a baking sheet and brush with the olive oil.

  3. Sprinkle the salt, pepper, and garlic powder evenly on top of the slices.

  4. Bake for 15 minutes. Verify the potato is softened by stabbing a fork through one of the slices. Sprinkle both cheeses evenly on top of the slices and bake for 3-5 more minutes or until the cheese is melted. Enjoy!
