Imagine sipping your favorite coffee from your favorite mug while the scent of cinnamon bread in the air promises this breakfast to you.

Perfect, right?

Personally, I like to prepare this breakfast bake the night before serving. That way I don’t have to think before coffee.

I just pop the breakfast bake in the oven, brew a cup, and begin the process of waking up my brain for the day.

Cinnamon Swirl Breakfast Bake


  • 6 eggs
  • 3 cups milk
  • 1/4 cup brown sugar
  • 2 tsp vanilla extract
  • 2 tbsp ground cinnamon
  • 10-12 pieces day-old white bread cut into cubes
  • 1/2 cup pecans chopped (optional)


  1. In an extra large bowl whisk the eggs and milk. Add the brown sugar, vanilla extract, and cinnamon. Whisk until completely incorporated.

  2. Stir the bread and pecans into the egg mixture.

  3. Pour the ingredients into a prepared 13x9 inch baking pan and cover with foil. Set in the refrigerator for one hour or overnight.

  4. When you are ready to bake preheat your oven to 350 degrees. Bake, covered, for 30 minutes. Remove the foil and bake an additional 10 minutes, until browned. Cut, serve, and enjoy!
