Cheesy Baked Potato Slices

  • 4 russet potatoes sliced 1/2 inch thick
  • 1/4 cup extra virgin olive oil (or butter)
  • 1 Tbsp garlic powder
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • salt to taste
  • pepper to taste
  1. Preheat your oven to 400 degrees.

  2. Arrange the potato slice on a baking sheet and brush with the olive oil.

  3. Sprinkle the salt, pepper, and garlic powder evenly on top of the slices.

  4. Bake for 15 minutes. Verify the potato is softened by stabbing a fork through one of the slices. Sprinkle both cheeses evenly on top of the slices and bake for 3-5 more minutes or until the cheese is melted. Enjoy!
